Flavor Your Life Shares a Recipe for Marinated Grilled Shrimp with Roasted Red Pepper Dip

Marinated Grilled Shrimp Ingredients:

cup orange juice

2 tbsp. extra virgin olive oil

cup finely chopped Italian parsley

2 tbsp. scallions, finely chopped

2 tsp. Ponzu sauce (or soy sauce)

1 lg. clove garlic, minced

1 tsp. orange zest

1/2 tsp. dried oregano

1/2 tsp. salt

tsp. freshly ground black pepper

1 lb. extra-large or jumbo shrimp, peeled & deveined (about 24 shrimp)

Roasted Red Pepper Dip Ingredients:

1 cup (about 6 oz.) jarred roasted red peppers, drained

1 small clove garlic

1 tbsp. extra-virgin olive oil

1 tbsp. chopped scallion

1/2 tsp. smoked Spanish paprika

1/2 tsp. ground cumin

1 tsp. orange juice

2 oz. cream cheese cut into small pieces, softened

Soak 12 (6-inch long) bamboo skewers in water about 20 minutes. Place marinade ingredients in a large zipper-style plastic freezer bag; shake about 15 seconds to combine. Place shrimp in bag; seal, shake to coat well with marinade; refrigerate 30-45 minutes.

Pre-heat the grill to medium-high heat. Thread 2 shrimp onto each pre-soaked skewer. Grill about 2-3 minutes per side or until pink & just cooked through. Serve warm with Roasted Red Pepper Dip (see below) and garnish with a sprinkle of additional chopped scallions, if desired.
